Soak potato wedges in cold water for 30 minutes, then pat dry
Toss wedges with 2 tbsp oil and season with salt
Cook wedges in air fryer at 380°F (193°C) for 25 minutes, shaking basket every 10 minutes
Make batter by whisking flour, baking powder, salt, and beer until smooth
Pat fish dry and season with salt and pepper
Dip fish in batter, letting excess drip off
Cook battered fish at 400°F (200°C) for 12-15 minutes until golden
Meanwhile, cook peas until tender, then mash with butter, mint, salt, and pepper
Serve fish and chips with mushy peas and malt vinegar
