Preheat oven to 425°F and grease a large rimmed sheet pan
Combine rice, chicken broth, Cajun seasoning, paprika, and cayenne in the sheet pan
Add diced onion, bell peppers, celery, and minced garlic to the rice mixture
Drizzle with olive oil and stir everything together
Cover tightly with aluminum foil and bake for 25 minutes
Remove foil, add sliced sausage on top, and bake uncovered for 15-20 minutes until rice is tender
Let stand 5 minutes, then fluff with a fork and garnish with fresh parsley
