Remove scallops from shells if needed and pat completely dry
Season scallops with salt and white pepper
Mix softened butter with garlic, parsley, and thyme
Sauté shallot until translucent, add white wine and reduce by half
Place scallops in air fryer-safe ramekins or shells
Top each scallop with herb butter mixture
Combine breadcrumbs and gruyère, sprinkle over scallops
Drizzle with reduced wine and shallot mixture
Air fry at 400°F (200°C) for 8-10 minutes until golden and scallops are opaque
Serve immediately with crusty bread
