Heat butter and olive oil in large oven-safe pot over medium-low heat
Add onions and cook slowly for 25-30 minutes, stirring occasionally until deep golden brown
Add brandy and cook for 2 minutes until alcohol evaporates
Pour in beef broth and add bay leaf, bring to boil
Add pasta and cook for 8 minutes, stirring frequently
Stir in cream and thyme, season with salt and pepper
Remove bay leaf and top with both cheeses
Broil for 3-4 minutes until cheese is bubbly and golden
Let rest for 5 minutes before serving
