Cook pasta according to package directions, drain and rinse with cold water until completely cool
In a large bowl, whisk together olive oil, red wine vinegar, oregano, salt and pepper
Add cooled pasta, feta cheese, olives, tomatoes, cucumber, and red onion to the bowl
Toss everything together until well coated with dressing
Sprinkle with fresh parsley and let sit for 10 minutes before serving
Adjust seasoning if needed and serve chilled or at room temperature
