In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper
Add chicken chunks to the marinade and toss to coat, let marinate for 30 minutes
Preheat oven to 425°F and line a sheet pan with parchment paper
Thread marinated chicken onto metal skewers or spread directly on the sheet pan
Roast for 18-22 minutes, turning once halfway through, until chicken is golden and cooked through
While chicken cooks, prepare bowls with cooked rice as the base
Top rice with diced cucumber, tomatoes, and sliced red onion
Add the hot cooked chicken to each bowl
Dollop tzatziki sauce over each serving
Garnish with fresh dill and serve with lemon wedges
