Preheat grill to medium heat
Mix brown sugar, melted butter, vanilla, and cinnamon in a bowl
Brush pineapple rings with butter mixture on both sides
Grill pineapple for 3-4 minutes per side until caramelized and tender
Remove from grill and let cool slightly
Place grilled pineapple rings in serving bowls
Top each ring with scoops of coconut ice cream
Sprinkle with toasted coconut flakes and macadamia nuts
Add whipped cream and cherry on top before serving
