Soak rice noodles in warm water until soft, drain and set aside
Marinate shrimp with 1 tbsp oil, salt, and pepper
Preheat grill to high heat
Mix tamarind paste, fish sauce, and brown sugar for sauce
Grill shrimp for 2-3 minutes per side until pink and slightly charred
Heat remaining oil in large wok or pan over high heat
Add garlic and cook 30 seconds, then add beaten eggs and scramble
Add drained noodles and sauce, toss for 2-3 minutes
Add bean sprouts, green onions, and grilled shrimp, toss until heated through
Serve with crushed peanuts, lime wedges, and chili flakes
