Salt cabbage, let drain 15 minutes, squeeze out excess water
Mix pork, cabbage, green onions, garlic, ginger, soy sauce, and sesame oil
Place 1 tbsp filling in center of each wrapper
Wet edges, fold and pleat to seal
Preheat air fryer to 180°C
Arrange gyoza in basket, spray with oil
Cook 8 minutes until bottoms are golden and crispy
Serve with dipping sauce
