In a heavy saucepan, combine 150g sugar with water over medium heat, swirling occasionally until golden amber caramel forms
Quickly pour caramel into your flan mold, tilting to coat the bottom evenly
In the same saucepan, whisk together eggs, condensed milk, evaporated milk, remaining sugar, vanilla, cinnamon, and salt
Strain the mixture through a fine sieve directly into the caramel-lined mold
Cover tightly with foil and steam in a large pot with 2 inches of simmering water for 50-60 minutes
Test doneness by inserting a knife - it should come out clean
Cool completely, then refrigerate for at least 4 hours before inverting onto serving plate
