Season chicken pieces with salt and pepper
In a large Dutch oven, cook bacon lardons until crispy, remove and set aside
Brown chicken pieces in the bacon fat, then remove
Sauté onions and mushrooms in the same pot until golden
Add garlic and cook for 1 minute
Return chicken and bacon to pot, add wine, stock, bay leaves, and thyme
Bring to a boil, then reduce heat and simmer covered for 45 minutes
Mix butter and flour to make a paste, whisk into the sauce to thicken
Simmer uncovered for 10 more minutes until sauce coats the back of a spoon
