Preheat oven to 450°F (230°C). Line a large sheet pan with foil.
Toss pork chunks with cumin, chili powder, oregano, paprika, salt, and 2 tbsp olive oil.
Arrange pork on sheet pan and roast for 20 minutes.
Toss peppers and onions with remaining oil, garlic, and lime juice.
Add vegetables to pan with pork and roast another 15-20 minutes until pork is crispy.
Shred pork slightly with forks and mix with pan juices.
Serve with warm tortillas, cilantro, and lime wedges.
