Heat a large pot over medium heat and add curry paste, cook for 1 minute until fragrant
Add garlic and ginger, cook for 30 seconds
Pour in coconut milk and whisk to combine with curry paste
Add vegetable broth, soy sauce, and brown sugar, bring to a simmer
Add carrots and broccoli, cook for 5 minutes
Add bell pepper and snap peas, cook for 3 minutes
Add rice noodles and cook according to package directions
Stir in lime juice and remove from heat
Garnish with fresh basil and green onions before serving
