Heat oil in large wok or skillet over high heat
Add beaten eggs, scramble and remove to plate
Add garlic and ginger to pan, stir-fry 30 seconds
Add green curry paste, cook 1 minute until fragrant
Add bell pepper, snap peas, and carrot, stir-fry 3 minutes
Add day-old rice, breaking up clumps with spatula
Stir in soy sauce, fish sauce, and brown sugar
Add scrambled eggs back to pan with green onions
Stir-fry 2-3 minutes until heated through
Remove from heat, stir in fresh Thai basil
Serve immediately with lime wedges
