Preheat the air fryer to 190°C for 3 minutes.
Place the chicken breasts between two sheets of cling film and pound to an even thickness of about 2cm for even cooking.
Brush both sides of each chicken breast with olive oil, then season with Italian herbs, garlic powder, salt, and black pepper.
Place the seasoned chicken breasts in a single layer in the air fryer basket, ensuring they do not overlap.
Air fry at 190°C for 10 minutes, then flip the chicken breasts over.
Top each chicken breast with tomato slices and mozzarella slices.
Continue to air fry for a further 5-7 minutes until the cheese is melted and bubbling, and the chicken reaches a safe internal temperature of 75°C when checked with a meat thermometer.
Remove from the air fryer and let rest for 2 minutes.
Top with fresh basil leaves and drizzle with balsamic glaze before serving.
