Soak saffron in 2 tbsp warm water for 10 minutes, then mix into cooled risotto
Form rice into 12 balls, placing a cube of mozzarella in the center of each
Dip each ball in beaten egg, then roll in breadcrumbs mixed with parmesan
Preheat air fryer to 200°C
Brush arancini with olive oil and air fry for 12-15 minutes, turning halfway until golden
Serve immediately while cheese is still molten
