Preheat oven to 450°F and line a sheet pan with parchment paper
Whisk together soy sauce, honey, rice vinegar, garlic, ginger, and cornstarch
Toss chicken cubes with half the teriyaki sauce and let marinate 10 minutes
Arrange chicken on one side of the sheet pan
Toss vegetables with oil and spread on the remaining space
Bake for 12 minutes, then toss everything together
Drizzle with remaining sauce and bake 8-10 minutes more
Remove when chicken reaches 165°F and vegetables are tender-crisp
Garnish with sliced green onions and sesame seeds before serving
