Comforting one-pot Asian noodle soup with tender chicken, fresh ginger, and sesame oil. Healthy 30-minute dinner for busy weeknights.
Heat 1 tablespoon sesame oil in large pot over medium-high heat, cook chicken until done, about 6 minutes
Add garlic and ginger, stir for 30 seconds until fragrant
Pour in chicken broth, soy sauce, remaining sesame oil, and rice vinegar, bring to boil
Add noodles, carrots, and mushrooms, cook 4 minutes
Stir in snap peas and cook 2 minutes more
Slowly drizzle beaten eggs into soup while stirring to create egg ribbons
Remove from heat, taste and adjust seasoning
Serve topped with green onions, sesame seeds, and chili oil on the side
