Cook noodles according to package directions, drain and rinse with cold water until completely cool
In a large bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, and grated ginger
Add the cooled noodles to the dressing and toss to coat evenly
Add julienned vegetables and green onions, tossing gently to combine
Refrigerate for at least 15 minutes to allow flavors to meld
Before serving, sprinkle with sesame seeds and fresh cilantro
Serve chilled as a light lunch or side dish
