Heat 1 tablespoon oil in a large wok or skillet over high heat
Add beaten eggs and scramble until just set, then remove and set aside
Add remaining oil to the same pan, then add garlic and ginger, stir-fry for 30 seconds
Add frozen vegetables and stir-fry for 2 minutes until heated through
Add rice, breaking up any clumps, and stir-fry for 3-4 minutes
Return scrambled eggs to the pan along with soy sauce, oyster sauce, and sesame oil
Toss everything together, season with white pepper, and garnish with green onions before serving
