Preheat oven to 375°F and boil diced potatoes until tender, about 8 minutes
Heat oil in pan, add cumin and coriander seeds until fragrant
Add onion, cook until golden, then add ginger-garlic paste and spices
Add cooked potatoes and black beans, mash slightly, season with salt and cool completely
Cut phyllo into strips, place filling at one end and fold into triangles
Brush triangles with melted butter and place on sheet pan
Bake 15-20 minutes until golden and crispy
