Toast and grind cumin and coriander seeds, set aside
Heat coconut oil in large pot, sauté onion until golden
Add garlic, ginger, and all spices, cook 1 minute
Add tomatoes and cook 5 minutes until thick
Stir in lentils, coconut milk, and water, bring to boil
Simmer 20 minutes until lentils are soft
Gently fold in fish, cook 8 minutes until fish flakes easily
Garnish with cilantro and serve over basmati rice
