Mix gochujang, soy sauce, rice vinegar, honey, garlic, ginger, and sesame oil in a bowl to create marinade
Pat chicken thighs dry and season with black pepper
Marinate chicken in half the sauce mixture for at least 30 minutes
Preheat grill to medium-high heat
Grill chicken skin-side down for 6-7 minutes until crispy
Flip and grill another 6-8 minutes until internal temperature reaches 165°F
Brush with remaining sauce in last 2 minutes of cooking
Rest for 5 minutes before serving
Garnish with green onions and sesame seeds
