Preheat air fryer to 380°F (193°C)
Whisk together gochujang, honey, rice vinegar, sesame oil, soy sauce, and ginger
Toss vegetables with vegetable oil and season with salt
Air fry vegetables for 6 minutes
Brush cod fillets with half the gochujang glaze
Add fish to air fryer with vegetables, cook 8-10 minutes
Brush with remaining glaze in last 2 minutes of cooking
Sprinkle with sesame seeds and green onions before serving
