Preheat oven to 375°F and lightly oil a 9x13 inch baking dish
Sauté onions and bell peppers in 1 tbsp olive oil until softened, about 8 minutes
Add garlic and cook for 1 minute, then spread mixture in bottom of baking dish
Arrange zucchini, eggplant, and tomato slices in overlapping pattern on top of vegetables
Brush with remaining olive oil and sprinkle with herbes de Provence, salt, and pepper
Cover with foil and bake for 40 minutes
Remove foil and bake 15 minutes more until vegetables are tender and lightly golden
Garnish with fresh basil before serving
