Cook macaroni until just under al dente, drain and set aside
In a large cast iron skillet, melt butter and sauté onion until golden
Add garlic, ginger, and cumin seeds, cook for 1 minute until fragrant
Stir in flour and cook for 2 minutes to make a roux
Gradually whisk in cream, tomato puree, tikka masala paste, and spices
Add cooked macaroni and half the cheeses, stirring until creamy
Preheat grill to medium heat with lid
Top pasta with remaining cheese and place skillet on grill
Cover and grill for 12-15 minutes until bubbly and lightly charred on top
Garnish with cilantro and serve immediately
