Blanch asparagus in boiling salted water for 2 minutes until bright green but still crisp, then immediately transfer to ice water to stop cooking. Pat dry thoroughly.
In a small bowl, whisk together soy sauce, mirin, honey, garlic, and ginger to make the glaze. Set aside.
Take 2 asparagus spears and wrap one slice of beef around them in a spiral pattern, starting from the middle. Repeat with remaining asparagus and beef to create 12 bundles.
Season the wrapped bundles lightly with black pepper.
Heat vegetable oil in a large skillet or grill pan over medium-high heat until shimmering.
Place beef-wrapped asparagus bundles seam-side down in the pan. Cook for 2-3 minutes per side, turning to brown all sides evenly, until beef reaches an internal temperature of 63°C for medium or 71°C for well-done.
Pour the soy glaze mixture over the bundles and continue cooking for 1-2 minutes, turning to coat evenly, until the glaze thickens and becomes sticky.
Transfer to a serving platter and sprinkle with toasted sesame seeds and sliced green onions. Serve immediately.
