Heat oil in a large pot over medium heat
Add sliced onion and cook until translucent, about 4 minutes
Stir in red curry paste and cook for 1 minute until fragrant
Add coconut milk and whisk until smooth
Add red lentils, vegetable broth, and bring to a boil
Reduce heat and simmer for 15-20 minutes until lentils are tender
Add bell pepper and cook for 5 minutes
Stir in fish sauce, brown sugar, and lime juice
Garnish with fresh basil and sliced chilies before serving
