Soak rice noodles in warm water until soft, drain thoroughly
Whisk lime juice, fish sauce substitute, palm sugar, and chilies for dressing
Toss drained noodles with oil to prevent sticking
Preheat grill to medium and place noodles in grill basket
Grill noodles for 4-5 minutes, tossing frequently until lightly charred
Transfer warm noodles to serving bowl
Add cucumber, mint, cilantro, and dressing, toss well
Top with crushed peanuts and serve immediately
