Cook noodles according to package directions, drain and rinse with cold water until completely cool
In a large bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and grated ginger
Add cooled noodles to the dressing and toss well

Toss everything together until well coated with dressing
