Heat coconut oil in large pan
Add mustard seeds and let them splutter
Add curry leaves, chilies, ginger and cashews
Sauté for 1 minute until fragrant
Add turmeric and cooked rice, mix gently
Pour in coconut milk and simmer for 3 minutes
Season with salt and garnish with coriander
