Preheat oven to 425°F and use a deep sheet pan or roasting pan
Mix coconut milk, vegetable broth, cumin, coriander, turmeric, garam masala, cayenne, garlic, ginger, and salt in the pan
Add rinsed lentils, cauliflower florets, sliced onion, and diced tomatoes to the liquid mixture
Drizzle with coconut oil and stir everything to combine evenly
Cover tightly with foil and bake for 35 minutes
Remove foil and continue baking for 10-15 minutes until lentils are tender and liquid is absorbed
Let rest for 5 minutes, then garnish with fresh cilantro before serving
