Marinate sliced beef with 1 tbsp soy sauce, 1 tbsp sesame oil, garlic, and ginger for 15 minutes
Heat vegetable oil in a large wok or skillet over high heat
Cook marinated beef for 3-4 minutes until browned, then remove and set aside
Add carrots to the same pan and stir-fry for 2 minutes
Add kimchi and cook for 2 minutes until fragrant
Add day-old rice, breaking up clumps, and stir-fry for 3-4 minutes
Mix gochujang, remaining soy sauce, sesame oil, rice vinegar, and brown sugar in a small bowl
Return beef to pan, add sauce mixture and peas, stir-fry for 2 minutes
Create wells in the rice and crack eggs into them, scrambling gently
Garnish with green onions and sesame seeds before serving
