Grilled bell peppers stuffed with Mediterranean orzo, feta, and herbs. Healthy vegetarian dinner ready in 40 minutes.
Cook orzo according to package directions, drain and set aside
Cut tops off peppers and remove seeds and membranes
Preheat grill to medium heat
Heat 1 tbsp olive oil in a skillet, sauté onion and garlic until soft
Mix cooked orzo, sautéed onion mixture, feta, sun-dried tomatoes, pine nuts, and herbs
Add lemon juice, remaining olive oil, salt and pepper to the orzo mixture
Stuff each pepper with the orzo mixture, packing gently
Place stuffed peppers on grill, cover and cook for 25-30 minutes until peppers are tender
Serve hot with a drizzle of olive oil and extra herbs
