Heat olive oil in large oven-safe pot over medium heat
Sauté onion and garlic until softened, about 5 minutes
Add orzo and toast for 2 minutes
Pour in vegetable broth and oregano, bring to boil
Reduce heat and simmer for 10 minutes until orzo is tender and liquid absorbed
Stir in sun-dried tomatoes, half the feta, parsley, and pine nuts
Season with salt and pepper
Stuff bell peppers with orzo mixture and place in same pot
Cover and bake at 375°F for 25 minutes until peppers are tender
Top with remaining feta before serving
