One-pot Spanish-inspired seafood rice with prawns, mussels, and saffron. Restaurant-quality paella-style dinner ready in 35 minutes.
Heat olive oil in large paella pan or skillet, sauté onion until soft
Add garlic, bell pepper, and tomatoes, cook 5 minutes until thick
Stir in rice, paprika, and saffron, toast for 2 minutes
Pour in hot stock, season with salt and pepper, bring to boil
Reduce heat and simmer 15 minutes without stirring
Add prawns and mussels, cook 5-8 minutes until seafood is done
Let rest 5 minutes, garnish with parsley and serve with lemon
