Preheat oven to 400°F and line a large sheet pan with parchment paper
Pat chickpeas dry and toss with 2 tbsp olive oil, oregano, thyme, salt, and pepper
Arrange chickpeas, zucchini, red onion, cherry tomatoes, and bell pepper on sheet pan
Drizzle vegetables with remaining olive oil and minced garlic
Roast for 25-30 minutes until chickpeas are crispy and vegetables are tender
Remove from oven and immediately sprinkle with lemon juice, zest, and crumbled feta
Garnish with fresh parsley and serve warm
