Colorful bell peppers stuffed with aromatic herbed rice, pine nuts, and feta. Healthy Mediterranean dinner ready in 45 minutes.
Heat olive oil in large pot, sauté onion until softened, about 5 minutes
Add garlic and rice, cook 2 minutes until rice is lightly toasted
Pour in broth, add oregano, salt, and pepper, bring to boil
Reduce heat, cover and simmer 15 minutes until rice is tender
Remove from heat, stir in pine nuts, feta, parsley, and dill
Stuff peppers with rice mixture and place in baking dish with 1/2 inch water
Cover and bake at 375°F for 25-30 minutes until peppers are tender
