Remove mushroom stems and scrape out gills
Cook diced chorizo in pan until crispy, about 5 minutes
Mix chorizo with cheese, garlic, breadcrumbs, and parsley
Stuff each mushroom cap with chorizo mixture
Drizzle with olive oil and preheat air fryer to 375°F
Cook for 10-12 minutes until mushrooms are tender and tops golden
