Heat olive oil in a large pot over medium heat
Add minced garlic and red pepper flakes, cook for 1 minute
Add drained chickpeas and stir to coat with oil
Season with salt, pepper, and oregano
Cook for 8-10 minutes, stirring occasionally
Add sun-dried tomatoes and cook for 2 more minutes
Remove from heat and stir in lemon juice, zest, and fresh parsley
Taste and adjust seasoning before serving
