Heat olive oil in large pot and sauté onion, carrots, and celery for 5 minutes
Add garlic, oregano, and thyme, cook for 1 minute
Add lentils, diced tomatoes, broth, and bay leaves
Bring to boil, then reduce heat and simmer covered for 35-40 minutes
Stir occasionally until lentils are tender
Remove bay leaves and stir in fresh parsley
Season with salt and pepper, serve with crusty bread
