Combine all spices in a bowl with olive oil, lemon juice, and garlic to make marinade.
Cut chicken into strips and toss with half the marinade. Let sit for 20 minutes.
Preheat oven to 450°F (230°C). Line sheet pan with parchment.
Toss vegetables with remaining marinade and spread on pan.
Add marinated chicken strips over vegetables.
Roast for 25-30 minutes until chicken is cooked through and vegetables are tender.
Garnish with fresh parsley and serve with pita or rice.
