Pound chicken to even thickness and season with sumac, salt, pepper, and 1 tbsp olive oil
Marinate sliced onions in lemon juice and pinch of salt
Preheat grill to medium-high heat
Grill chicken for 5-6 minutes per side until cooked through
Rest chicken 5 minutes then slice thinly
Grill naan breads for 1-2 minutes per side until crispy
Spread labneh evenly on warm naan
Top with sliced chicken and marinated onions
Garnish with mint, parsley, and pine nuts
Drizzle with remaining olive oil and serve immediately
