Fragrant Middle Eastern rice pilaf with dried fruits, nuts and warming spices. Elegant side dish for special occasions.
Rinse rice until water runs clear
Sauté onion in oil until golden
Add rice and spices, cook for 2 minutes
Pour in hot stock and add bay leaf
Bring to boil, then simmer covered for 15 minutes
Stir in dried fruit and nuts
Rest for 5 minutes before fluffing
Garnish with fresh parsley before serving
